Sylvia Charles grew up with rich homemade Indian meals, made by her mother and aunt. She always loved food, but it wasn’t until she moved to California that she felt the urge to cook in her own kitchen. Inspired by the exotic spices she grew up around and blown away by the abundance of fresh and organic local produce that surrounded her year round (her first farmers’ market was a thrill!), she began to combine authentic Indian flavors with an application outside of traditional curries.
When an injury took her out of her career in medicine, she found time to think about what she really wanted to do. She launched Spice Mama SF, offering a line of bottled Indian sauces. While experimenting she began using dates and fell into a new product that aligned perfectly with her passion for flavors and health.

2 tbsp finely minced ginger
1 tbsp champagne vinegar
1 tbsp just date syrup
1 tbsp pomegranate juice
2 tbsp olive oil
4 large ripe peaches
Handful fresh mint, chopped
1 thinly sliced serrano chile
Finely chop ginger and let sit in champagne vinegar and pomegranate juice for at least 20 minutes. Slice peaches and toss with serrano and mint. Whisk ginger mixture with Just Date Syrup & olive oil. Drizzle ginger-date syrup dressing over peaches for a salad that hits sweet, spicy, and tangy notes!
